Have you met Colin yet? He’s one of our great butchers at Sharnfold Farm and ensures you get the best out of our produce. When he’s not carving the meat or making sure the display is perfect, he’s often seen giving advice and tips on cooking produce. We asked him a few questions including his favourite recipe at the moment…

What are your Top Tips for using Sharnfold Produce?

This time of year you can’t beat a nice warming beef casserole using our 28-day mature braising steak, for 2 people. Here’s my favourite recipe:

  • First fry 750g diced steak (ideally Sharnfold’s 28 day mature braising steak) to seal in the goodness
  • Dice 2 onions and 4 carrots
  • Grab 200g mushrooms, 1 large leek and 2 large parsnips from the Sharnfold shop and chop up
  • Place the beef in the slow cooker, add all the vegetables and 1 litre of beef stock
  • Cook for 8 hours in a slow cooker and slow put in when you go to work.

How about adding dumplings if you’re after a really warming, filling supper?

  • For the dumplings sift 125 g self-raising flour into a bowl and stir in 60g of suet and a pinch of dried parsley (and any other herbs you fancy)
  • Add 100ml water and stir to make a soft dough
  • For the last hour of the beef casserole cooking, add in golf ball sized pieces of the dough on top of the casserole in the slow cooker

I always have the casserole with a chunk of our new range off artisan bread. If you like a little bit more kick add some horseradish from our extensive range too!

What’s your favourite item from the butcher counter?

For sausages I go for the Honey & Mustard! In the summer Lamb & Mint sausages are divine on the BBQ and our 100% beef burger really doesn’t get any better.

What do you like to get up to when you’re not at the farm?

I keep a very big tropical fish tank with 2 large lobsters’ (not for eating) and about 50 fish. I also go clay pigeon shooting.
