Creamy Squash Pasta

We have found a healthy, tasty and super easy meal to make which will be enjoyed by all the family! Here is a delicious recipe using Sharnfold Squash:

Ingredients

  • 350g of Sharnfold squash
  • 350g Sharnfold pasta
  • 3tbsp olive oil
  • 3 peeled garlic cloves
  • Small bunch of sage

Method

Prep Time: 5min – Cook Time: 1hr
– Ready: 1hr 5min (serves 4)

  1. Heat oven to 200°c/180°c fan/gas 6.
  2. Put the Sharnfold squash and garlic on a baking tray and drizzle with the olive oil. Roast for 35-40 mins or until soft. Then season.
  3. Cook the Sharnfold pasta according to the packet instructions.
  4. Drain the pasta, making sure you reserve the water.
  5. Use a stick blender to whizz the squash with 400ml cooking water.
  6. Heat a little oil in a frying pan, fry the sage until crisp.
  7. Then drain on kitchen paper.
  8. Tip the pasta and sauce into the pan and warm through. Scatter the sage on top. Enjoy!
