Dennis’ Hearty Beef & Veg Casserole

Dennis, Sharnfold’s Managing Partner, is a big fan of hearty, home-cooked meals in the winter time. Here is his favourite Beef & Veg Casserole with Parsley Dumplings recipe. This meal will definitely warm up tums…

Ingredients:

For the Casserole

  • 1/4 cup flour
  • 1 kg of Sharnfold Braising Steak (only £7.95 per kg right now! – Jan 2017)
  • Dashing of olive oil
  • 2 onions, quartered
  • 2 garlic cloves, crushed
  • 2 cups of beef stock
  • 410g can of crushed tomatoes
  • 2 carrots, peeled and sliced
  • 2 parsnips, peeled and cut into 2cm pieces
  • 1 swede, peeled and cut into 2cm pieces
  • 3 celery stalks

For the dumplings

  • 1 1/2 cups of self-raising flour
  • 1/2 cup plain flour, sifted
  • 2 tbsp finely chopped fresh parsley leaves
  • 3/4 cup milk
  • 60g butter, melted

Method:

  • Preheat your oven to 160c
  • Put your Sharnfold Braising Steak, 1/4 cup flour into a sandwich bag and season with salt and pepper. Seal shut and shake to coat the beef
  • Heat a dashing of olive oil in a heavy, ovenproof casserole dish over a medium heat. Cook the beef in batches for 3-4 minuted or until browned. Once all cooked take our the dish and put aside
  • Add some more olive oil to the casserole dish and add in the onions and garlic. Cook for 4-5 mins or until tender
  • Return the beef to the casserole dish and add in the stock, tomatoes, carrots, parsnips, swede and celery. Bring this to the boil and cover with a lid
  • Transfer this to the oven and bake for 1.5 hours or until the meat is tender
  • To make the dumplings combine the flours and parsley in a bowl
  • Make a well in the centre of this mix and add the milk and butter. Stir this to form a soft dough and roll the mixture into 12 dumplings
  • Put the dumplings into the casserole dish and bake again, covered for 20-25 minutes or until the dumplings are fully cooked
