Sweet Potato Cottage Pie

January is a month many people urge to be healthy and happy, so we thought we’d bring you a recipe that caters for those desperate for winter comfort food and those on a bit of a health kick. Plus, get the extra feel-good factor of using non-processed, quality locally grown and reared ingredients.

Introducing the ‘Sweet Potato Cottage Pie’…

Your shopping list:

  • Sharnfold non-processed beef mince
  • Peas
  • Worcester Sauce
  • 1 onion
  • 1 carrot
  • 2 celery sticks
  • Sharnfold sweet potatoes
  • Tomato paste
  • 400g tin of chopped tomatoes
  • Milk
  • Butter
  • Cheese

How to make it…

  1. Heat some olive oil in a saucepan and add in 1 chopped up onion, 1 chopped & peeled carrot and 2 chopped celery sticks
  2. Cook for 3-4 mins and add in Sharnfold 100% natural beef mince and brown
  3. Drop in 2 teaspoons of worcestershire sauce, 2 tablespoons of tomato paste, 400g can of tinned tomatoes and a few pinches of dried mixed herbs
  4. Bring to the boil and simmer for 20-25 mins
  5. Stir in some peas
  6. Preheat the oven to 180c
  7. Skin your sweet potatoes and cook in boiling water for about 8 mins or until tender
  8. Drain the potatoes, add a few splashes of milk & a knob of butter and mash until smooth
  9. Spoon your Sharnfold beef mixture into the bottom of an oven dish and pour the sweet potato mash on top
  10. Sprinkle with some cheese and pop into the oven for 30 mins or until it has a golden top to it
