Jess’ Sweetcorn Potato Burgers

She is one of our fantastic workers at the farm, often outside on the farm with the crops and animals. One of her many other duties includes being the tractor & trailer driver!

Favourite part of working at Sharnfold Farm?

I really enjoy learning different skills with picking and planting a variety of crops. I’m tractor mad, so love driving the tractors around the farm!

Favourite Crop?

It was a great summer working with soft fruits especially the strawberries, planting them and picking them for the farm shop.

We are now picking sweetcorn which I enjoy cooking at home the same day – it tastes amazing! Here’s a great veggie recipe that uses Sweetcorn:

Very Veggie Sweetcorn & Sweet Potato Burgers…

Ingredients

  • 2 large Sharnfold Sweetcorn (slicing off the kernels)
  • 6 large sweet potatoes
  • 2 red onions
  • 2 red chillies
  • Ground cumin
  • Ground coriander
  • Olive oil
  • Small bunch of fresh coriander
  • 200g polenta flour
  • Burger buns of your choice, Salsa, Onions and Salad leaves to serve

Method:

  • Preheat your oven to 200c
  • Make some holes in the potato skins with a fork and pop in the oven for about 45 mins, until really soft
  • Whilst the potatoes are cooking, cook your chopped red onions and red chillies in a pan with some olive oil until softened (about 10 mins), then leave to cool
  • Once cooked, take the potatoes out of the oven and peel the skins
  • Add the flesh of the potatoes to the cooled chillies and onions and mash together with the spices until smooth
  • Using your hands, then mix in the sweetcorn, fresh coriander, half the polenta flour and some salt and pepper
  • Shape the mixture into small burgers and carefully cover each burger with some remaining polenta, then dust off any excess
  • Place the burgers on an oiled baking tray and chill for 30 mins
  • Once cooled, you can either cook these on the BBQ on a non-stick frying pan or cook in the oven on oiled baking trays for about 15 mins!
  • Serve the burgers in toasted buns with a handful of salad leaves, salsa and some onions!
