Any of the farm made fresh cheese scones are very tasty – especially the cheese and asparagus scones when they’re in season! (April-June)

 

What’s your top recipe right now

For a party snack or as a treat, Feta and Spinach muffins are perfect. Here’s how I make them:

  • Grab a cupcake or muffin tray and oil to grease up
  • Sift 375g of self-raising flour into a bowl
  • Add 150g shredded feta, 250g of Sharnfold spinach, 110g chopped semi-dried tomatoes and a spoonful of grated parmesan into the flour
  • Stir to combine
  • In another bowl, whisk together 330ml milk, 90g butter, 1 egg and a tablespoon of chopped dill until combined
  • Add the milk mixture to the feta and spinach mixture and stir
  • Spoon the combined mix into the muffin tins, sprinkle with an extra parmesan and pop into a preheated oven at 200c for 20 mins
  • Yum!

What do you like to do outside of work?

I am a Mum to a beautiful 9 month old girl, so I love spending time with her.
