Leftover Christmas Turkey Recipe

No matter how carefully you try to prepare your portion size for Christmas dinner there always seems to be leftovers. Especially the turkey and roast potatoes! We’ve got a recipe using both of these that’s super easy and delicious too.

Ingredients

  • 300g leftover turkey, diced
  • 300g leftover cooked roast potatoes (or boiled), diced
  • 1 tbsp sunflower oil
  • 1 large onion, thickly sliced
  • 1 green pepper, deseeded and chopped
  • 2 tbsp curry paste
  • 2 garlic cloves, crushed
  • 400g can of chopped tomatoes
  • 2 tbsp mango chutney

Method

Prep Time: 5 mins – Cook Time: 15 mins – Ready: 20 mins (serves 4)

  1. Heat the oil in a large pan over a fairly high heat.
  2. Cook the onion and pepper for around 3 or 4 minutes until they start to soften and brown slightly.
  3. Stir in the curry paste and garlic, then cook for another 1-2 minutes.
  4. Add the chopped tomatoes and 150ml water. Bring to the boil and bubble for 5 minutes.
  5. Turn the heat down, stir in the turkey and potatoes, and cook for another 2 to 3 minutes.
  6. Season and add the mango chutney. Choose to serve with rice or naan… or both! It is Christmas after all.
