Lucy’s Roasted Squash Lasagna

Lucy is our staff member of the month for November 2015 – You may have seen her smiling away and working hard in the cafe and farm shop. We asked her a few questions, and below you can see her great vegetarian recipe. Plus find out her favourite item from the cafe…

What’s your top recipe right now?

This time of year nothing bears comfort food such as lasagna. Here’s my recipe for an easy, yet tasty roasted squash lasagna:

  • Cut up a Butternut Squash into 1cm pieces and roast with a little olive oil in the oven for about 20 mins
  • Once cooked, put into a blender and make into a puree
  • Whilst still in the blender, add 1/2 cup of milk, 1 cup of ricotta cheese and a pinch of salt
  • Blend!
  • Combine a cup of cooked spinach, 1 cup of ricotta cheese, 2 cloves of minced garlic, 1 cup of ricotta cheese and 1 cup of mozzarella cheese
  • Cook some lasagna noodles
  • In an oiled cooking dish spread 1/3 of the butternut puree and sprinkle with Mozzarella cheese
  • Then add a layer of lasagna noodles
  • Spread 1/2 of the spinach filling and top with another layer of lasagna noodles
  • Spread another 1/3 of butternut puree and put on another layer of lasagna noodles
  • You get the idea for the rest!!!
  • Top with a final layer of lasagna noodles and sprinkle on some paprika, mozzarella and seasoning
  • Cover with foil and pop in the oven for 30-40 mins until cooked through!

What’s your favourite item in the farm shop/cafe?

It’s got to be the cheese scones, followed closely by the cherry and almond scones!

What do you like to do outside of work?

I love growing veg and fruit on my allotment and also helping out at my daughters school!
