Melt in your mouth stew recipe

Winter is just around the corner, which means colder days and months. Stews, casseroles and pies are tasty warming dishes to enjoy. Our butchers highly recommend trying a leg of beef as something different. So, here’s a hearty recipe for all of the family to enjoy:

Ingredients

  • 1kg of Sharnfold’s leg of beef, bone removed, cut into 5cm pieces
  • 3 carrots, peeled and chopped
  • 3 sticks of celery, trimmed and chopped
  • 2 red onions, peeled and chopped
  • 4 cloves of garlic, unpeeled
  • 2 bay leaves
  • few sprigs of fresh rosemary
  • a small handful of dried porcini
  • 1 stick of cinnamon
  • sea salt
  • freshly ground black pepper
  • 2 x 400g tinned plum tomatoes
  • 1 tablespoon of flour
  • two-thirds of a bottle of Chianti

Method

Serves 4.

  1. Preheat your oven to 180º/160º fan/gas 4
  2. In a heavy-bottomed ovenproof saucepan, heat a splash of olive oil and gently fry the carrots, celery, onions, garlic, herbs and porcini and cinnamon for 5 minutes or until slightly softened
  3. Toss the pieces of beef in the seasoned flour, shaking off the excess
  4. Add the meat to the pan and stir everything together
  5. Add the tomatoes, wine and a pinch of salt and pepper, gently bring to the boil
  6. Cover with a double thickness piece of tinfoil and a lid, place in your preheated oven for around 5/6 hours or until the beef is meltingly tender
  7. Taste and check the seasoning
  8. Remove the rosemary and cinnamon stick and serve.
