Natasha’s Stuffed Marrow

Say hi to Natasha! She is our fantastic Cook at Sharnfold Farm. We ask Natasha what her top tips are for cooking with Sharnfold food, plus her favourite item from our shop…

Can you give us some top tips for cooking with Sharnfold produce?

I love Marrows! They are similar to courgettes, with a creamy flesh and a mild, but tasty flavour. They’re currently on offer at the moment in the farm shop… 75 p each or 2 for £1!

Here’s one of my favourite recipes for Stuffed Marrow with spicy mince (this recipe normally feeds 4 people)…

You’ll need:

  • 1 large Sharnfold Marrow
  • Olive oil
  • 600g beef mince
  • 1 onion
  • 2 cloves of garlic
  • 1 cinnamon stick
  • 2 bay leaves
  • 2 sprigs of thyme
  • 1 tsp of paprika
  • 1 tsp of ground cumin
  • 1 tin of chopped tomatoes
  • Parmesan
  • Handful of parsley
  • Salt & pepper

How to make it:

  1. Heat some olive oil in a large pan and, once hot, drop in the finely chopped onion
  2. Fry until softened and then add the beef mince and cook until brown
  3. Season the meat with salt & pepper then add in the cumin, cinnamon stick, paprika, bay leaves and thyme
  4. After the spices have cooked for a few minutes add in the chopped garlic and tin of tomatoes
  5. Give it all a good stir, turn the heat to low and let this cook for 2 hours or until it’s a lovely, thick ragu
  6. To prepare the marrows wash the skin and cut it lengthways. Scoop out the seeds and the centre and put the halves, flesh side up, on a baking tray… Sprinkle with salt & pepper and a drizzle of olive oil on both sides. Cover loosely with foil and cook in the oven at 170c for 40 minutes or until the flesh is soft
  7. Once the mince mix is ready and the marrow baked, put the mine ragu equally into each half of marrow. Sprinkle a good helping of parmesan on top, turn the oven to 200c and bake for 30 mins
  8. Serve with a good handful of parsley!
  9. I love to have mine with a selection of seasonal veg: Fresh dug Sharnfold carrots are brill at the moment – runner beans too!
