Potato, Leek & Bacon Bake

We have a tasty winter warmer which is ideal for cosy nights in or if you are hosting a dinner party. We’re sure everyone will love it! Here is our recipe using potatoes from our farm shop:

Ingredients

1kg of potatoes from Sharnfold, thinly sliced
600ml chicken or vegetable stock
6 Sharnfold leeks, thinly sliced into rounds
3-4 rashers of Sharnfold’s bacon, snipped
25g butter 3 tbsp double cream (optional)

Method

Prep Time: 15mins – Cook Time: 45 mins
– Ready: 1hr (serves 8)

  1. Heat oven to 200°c/180°c fan/gas 6.
  2. Put the stock in a large pan and bring to the boil.
  3. Add the potatoes and leeks from Sharnfold, bring back to the boil for 5 minutes.
  4. Drain well and reserve 200ml of the stock in a jug.
  5. Butter a large baking dish.
  6. Layer the potatoes and leeks, seasoning as you go. Then scatter Sharnfold bacon over the top.
  7. Season well and then pour over the 200ml of the reserved stock.
  8. Spoon over the cream (if using) and cover with foil.
  9. Bake for 40 minutes, uncovering halfway through so that the bacon crisps. Bon appétit!
