Rhubarb Cake

As rhubarb is in season, we have this yummy recipe which you can make using this delicious fruit. It’s the ideal spring treat for all of the family! Here is our recipe using your PYO Sharnfold rhubarb:

Ingredients

250g of Sharnfold rhubarb, chopped
125g butter
1 egg
1 teaspoon of vanilla extract
250g plain flour
1 teaspoon of bicarbonate of soda
1/4 teaspoon of salt
250g buttermilk
1 tablespoon plain flour
Topping
50g butter
2 teaspoons ground cinnamon
225g brown sugar

Method

Cook Time: 45 mins

  1. Heat the oven to 180°c fan/gas 4.
  2. In a large bowl, cream together the butter and sugar. Then beat in the egg and vanilla.
  3. In another bowl, sift together 250g flour, bicarbonate of soda and salt.
  4. Add sifted ingredients alternately with buttermilk to creamed mixture.
  5. Toss the rhubarb with 1 tablespoon flour and stir into cake mixture.
  6. Spoon cake mixture into buttered 23×23 cm baking tin and smooth the surface.
  7. Blend together 50g butter, cinnamon and brown sugar; sprinkle evenly over cake mixture.
  8. Bake in the oven for 45 minutes. Enjoy!
