Rhubarb & Custard Cocktail

If you love cocktails, we have the perfect recipe that uses local produce that you can pick yourself!

Here’s a different cocktail that’s great for anyone with a sweet tooth…

Ingredients:

For the Rhubarb Syrup:

  • 85g caster sugar
  • 300g chopped rhubarb

For the Cocktail:

  • 100ml vodka
  • 100ml of the above Rhubarb Syrup
  • 1 length rhubarb
  • 30ml advocaat
  • 75ml lemonade

Method:

  1. To make the rhubarb syrup, place the caster sugar into a saucepan with 75ml of water. Heat this on a low heat until the sugar disappears but the water doesn’t bubble. Tip in the chopped rhubarb and cover with a lid to increase the heat. Bring this to the boil. Then simmer uncovered for 5 minutes until the rhubarb is tender
  2. Turn off the heat and run the contents through a sieve into a bowl. Use a wooden spoon to squash the rhubarb into the sieve to get all the yummy juices out. Put this back into the pan and heat for a few minutes to let it form into a syrup. Pour this into a jug and leave to cool completely
  3. Put 4 cocktail glasses into the freezer. Mix the vodka and 100ml of the rhubarb syrup with ice. Peel some of the rhubarb to make small shreds and place into iced water (this will curl them up)
  4. In another jug, whisk together advocaat and lemonade with more ice. Share out the vodka and rhubarb mixture between the glasses and through a strainer to catch the ice
  5. Pour 25ml of advocaat mixture into each glass over an upside down spoon (this will make the mixture float on the surface of the vodka syrup). Drain the rhubarb shreds well and use to garnish!
