Sam is our staff member of the month!! It’s his turn to tell you all about his farm shop fav’s… Plus, see below Sam’s yummy recipe for Pumpkin Soup!

What is your role on the farm?

I work outside on the farm, helping to ensure all of the crops and produce from the farm is the best it can be.

What is your top Halloween foodie tip?

There’s not a lot better than pumpkin soup. Try this recipe for a classic autumnal soup…

  • Cut 1.5kg pumpkins in half, de-seed, sprinkle with salt & pepper and rub garlic cloves onto flesh
  • Sit rosemary sprigs on top of each pumpkin half and drizzle some olive oil over them
  • Pop them on a roasting tray in the oven for about an hour on 170c
  • Once cooked, scoop out the flesh and puree in a blender
  • For the soup, heat olive oil in a large saucepan, add 1 chopped onion and cook for 5–6 minutes until soft
  • Add 2 garlic cloves to the pan for a further 1–2 minutes
  • Stir in the pumpkin purée and a handful of Parmesan, and pour in 800ml chicken stock
  • Simmer for 10–12 minutes. Stir in 100ml double cream and heat for a minute
  • Put everything into a blender, add a knob of butter and blend until smooth
  • Pour the soup into a clean pan to reheat
  • Wild mushrooms are a great addition to Pumpkin soup… Heat the olive oil in a frying pan and fry the mushrooms over a high heat for a few minutes
  • Add a small amount of butter, season the mushrooms and stir, then remove from the heat
  • Pour the hot soup into warmed bowls and spoon the sautéed mushrooms into the middle. Top with Parmesan shavings, grind over some pepper and serve

What is your favourite item from the Farm Shop?

The Long Man Brewery do some great ales, there are loads to choose from. My favourite is the American Pale Ale! They are our supplier of the month too…

What do you like to do outside of work?

I love rollerblading on the seafront!
