Spanish Stuffed Marrow

There is lots of green veg in season in our Farm Shop, so we thought we’d share this delicious marrow recipe with you. It’s hard to know how to cook them, but follow the steps and you’ll have a delicious meal.


  • 1 Sharnfold marrow
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic gloves, crushed
  • 100g chorizo, chopped
  • 1 tsp smoked paprika
  • 1/2 tsp pepper
  • 1/2 of dried oregano and dried thyme
  • 2 x 400g cans chopped tomatoes
  • 140g roasted red pepper from a jar, sliced
  • handful of chopped parsley
  • 85g fresh breadcrumbs
  • 100g cheese, grated


Prep Time: 20mins – Cook Time: 1hr
– Ready: 1hr 20 mins (serves 6)

  1. Heat the oven to 200°c/180°c fan/gas 6.
  2. Cut the marrow in half lengthways, scoop out the middle.
  3. Put the halves, cut-side up, in a large roasting tin.
  4. In a saucepan, heat the oil. Then add the onion and sweat on a low heat for around 10 minutes or until soft.
  5. Add the garlic, chorizo, spices and dried herbs, cook for a few minutes.
  6. Then add the tomatoes and peppers. Turn down to a low simmer and cook for 10 mins,  stir through the parsley.
  7. Spoon the tomato mixture into the marrow halves.
  8. Cover with foil and bake for 30 mins.
  9. Sprinkle over the breadcrumbs and cheese, return to the oven for 10 mins or until the crumbs are golden and the marrow is tender. Enjoy!
