Sweetcorn & Sweet Potato Burgers

Searching for a tasty and healthy dinner recipe that all of the family will love? Here is a brilliant recipe using Sharnfold Sweetcorn & Sweet Potatoes!

Ingredients:

  • 6 large Sharnfold Sweet Potatoes
  • 2 Red Onions, finely chopped
  • 2 tsp Oil
  • 2 Red Chillies, finely chopped (either seeded or deseeded – depending on how hot you like it!)
  • 1tbsp Ground Cumin
  • 1 Freshly Picked Sharnfold Sweetcorn – carefully trim off the Kernels to use
  • Handful of Fresh Coriander, chopped
  • 200g Polenta
  • Burger Buns, Salsa, Onion and Salad Leaves to garnish

Method:

  1. Heat the oven to 180c
  2. Pierce the sweet potato skins and place them on a baking tray. Bake them for 45 mins or until soft. Bring them out of the oven and leave them to cool
  3. In a pan, drizzle a little oil and add the chillies and onions and cook until soft (around 8 mins). Leave to cool
  4. Peel the sweet potatoes and add the flesh to the chillies and onions. Mash this all together with the cumin and coriander. Add 100g of the polenta to this mix and some salt and pepper to taste
  5. Shape this mixture into small burgers and dip each one into the remaining polenta. Dust off any excess and put the burgers on a oiled tray and let chill for around 20-30 mins (you can freeze these burgers now if you wish!)
  6. Either pop onto the BBQ, fry on both sides or put into the oven until fully cooked and nice and brown
  7. Construct your burger by putting them into buns, add salad, salsa of your choice and onion.
