Toffee Apple Cake

We have found the perfect treat for all of the family which the little ones could help to bake, but will definitely help eat! Here is a tasty recipe using Sharnfold Apples.

Ingredients

  • 500g Sharnfold Apples Peeled & Chopped
  • 3 Eggs
  • 200g Sugar
  • 280ml Vegetable Oil
  • 2 Teaspoons Vanilla Extract
  • 375g Plain Flour
  • 1 Teaspoon Salt
  • 1 Teaspoon Bicarb of Soda
  • 120g Chopped Pecans

For the Toffee Sauce

  • 125g Butter
  • 60ml Butter
  • 225g Dark Brown Soft Sugar
  • 1 Pinch of Salt

Method

Prep Time: 25min – Cook Time: 1hr 15min – Ready: 1hr 40min

  1. Preheat the oven to 180°c/Gas 4 – Grease 25cm ring tin
  2. In a mixing bowl, beat the eggs until foamy – gradually add the sugar
  3. Blend in vanilla and oil
  4. Combine flour, bicarb, salt and then add to the egg mixture
  5. Stir in Sharnfold Apples and pecans
  6. Spoon mixture into the ring tin and bake in the preheated oven for 1 hour and 15 minutes
  7. Either cool in the tin or on a wire rack for 10 minutes – remove cake onto serving plate
  8. For the toffee sauce, combine all ingredients in a saucepan
  9. Boil for 3 minutes, stirring constantly
  10. Slowly drizzle over the warm cake and Enjoy!!
